Mainly grown on small farms, the cherries are selectively picked and processed, following quality protocols and standards encouraged by the Colombian Coffee Growers Federation. The geographical locale of Café de Cauca’s production area imparts very particular sensory and quality attributes to this coffee.
EP or European Processing is a quality standard for green coffee preparation. Sometimes referred to as 0/20 preparation, meaning it has no primary defects and less than 20 secondary defects per kilo, as set out by SCAA guidelines.
